Nathan Tallman suggests Otter.ai and we have used it for transcribing audio as well as creating captions for videos. It's pretty easy to use, but you do have to review the transcripts and do a little editing.

I've had good results with OpenAI's Whisper model via their API. https://platform.openai.com/docs/guides/speech-to-text

For a GUI-based AI transcription tool, check out Otter.AI (which powers Zoom captions) and trint.com. I've used both with pretty good results for English language recordings.
